Red Wine Chicken Pasta Recipe

Red Wine Chicken Pasta
serves 4

1 kg chicken thigh fillets
Pasta shells or your preferred pasta cooked to packs instructions
2 medium brown onions
3 cloves of garlic chopped finely
1 jar tomato paste
1 teaspoon chilli flakes
1 bunch baby spinach
1/2 cup extra sharp vintage cheese
1 cup red rose wine
olive oil
Salt and pepper to taste

Step 1
Brown the chicken in some hot olive oil in a deep pan.  Add the onions, chilli flakes and garlic and saute for 2 minutes gently.  Add the tomato paste.  Mix well and cook for 5 minutes on medium high heat. 

Step 2
Add most of the wine saving a splash.  Cover and cook on simmer heat for 20 minutes.

Step 3
Cook pasta as per directions.

Step 4
Splash in the remaining wine to the chicken mix.  Add the spinach and stir well.  Season with salt and pepper.  Stand for 2 minutes.  Sprinkle with cheese.  Pour over pasta and serve.  Adding bread, olives and a glass of the wine would go down a treat.  Feta cheese is a healthy alternative to vintage cheese.  Some fresh herbs could add real flavor, why not use some out of your garden.  Enjoy.
