Decadent Potato Salad

5 - 6 washed new potatoes, peeled and cubed bite size 2 tablespoon red onion, diced finely
2 bacon slice
3 boiled eggs
3 tablespoon sour cream
2 tablespoon mayonnaise
4 tablespoon rough chop shallots
1 tablespoon wholegrain mustard
1 clove garlic
salt and pepper
Step 1
Step 1 is in 3 parts -A,B,C. A) Boil washed, peeled potatoes in salted water with a clove of garlic for 15-20 minutes, until the potatoes are just starting to go soft. B) In an oven pre-heated to 200 degree Celsius cook bacon for approximately 20 minutes until crispy. C) Boil 3 eggs in cold water. Boil for 2 minutes and remove. Allow to stand in the hot water for 12 minutes. When crispy remove bacon from oven. After potatoes have cooked remove from heat and strain water. Allow all to cool, place in refrigerator for at least half an hour.
Step 2
To make dressing: In a separate bowl add mustard, sour cream, mayonnaise, red onion, shallots, salt and pepper and combine, cover and place in fridge.
Step 3
Peel cooled boiled eggs and halve or chop to the size you like. I just halved mine.
Step 4
Combine the potatoes, egg, bacon and dressing well. Taste and ensure it has enough seasoning and if it doesn't add more. Serve with a smile.
Hints: With so many great potato salad recipes out there why not try out a few new ones every now and then. Smoked salmon instead of bacon is a lovely change I can recommend for this exact recipe, also anchovies instead of salt is a decadent exchange that works deliciously. Low fat ingredients can easily be substituted and will still taste wonderful. Have a party or bbq soon? Why not make this the night before to save time.
